About Us:

 

Christine Friberg

Born on Long Island in Nassau County, Christine was raised by parents that were passionate about good food.  Her dad traveled the world for business and would return home with the itch to replicate the meals he ate abroad.  He spent hours on the weekend in the kitchen trying to get it "just right" and his family happily ate very well.  Always concerned about health and nutrition, her mom made everything from scratch (never a boxed cake!) with a keen eye on the health value of the food she served.

Christine worked in mid-town Manhattan for several years working in sales and marketing where she wined and dined clients using her company account.  A dream come true!  She later married and moved to Lake Placid to open a Bed & Breakfast but shortly after moved with her husband back to Long Island, settling on the North Fork.  Although not a graduate of culinary school, she brings her passion and love of good food into the kitchen and desire to feed and entertain others.  Upon research, she discovered that there is a class of cooks that list as an accomplishment having made each and every recipe from Julia Child's "Mastering the Art of French Cooking" in a year's time that work professionally in the food industry despite having no formal culinary training.  One of the judges on Food Network's "Iron Chef America" falls into this category.  Not having any interest in unusual and hard to find ingredients like snail, quail and pigeon, she decided to go through her entire library of cook books instead.  She recently started "ThreeBitesFoodBlog.com" to document this journey.  Three Bites Catering was started by Christine and fellow foodie Carol.

 

Carol Nuccio

Carol has lived in Mattituck NY since 2000.  Born in Bronxville NY , in Westchester County , and raised in Pleasantville NY , Carol was fortunate to have been exposed to good home cooking as a child living with her parents.  Her mother cooked a full dinner five nights a week, and then a “Sunday dinner” that was eaten midday . Her father also cooked, mostly on weekends, or whenever the mood struck.  While her mother focused on healthy weeknight dinners and homemade desserts, her father, because he didn’t have time constraints, liked to experiment: homemade pizza, calzones, and of course grilling.  He grew an unbelievable vegetable garden every summer for many years, and Carol and her sister and brother always ate fresh tomatoes, vegetables, lettuces and even cantaloupe and corn! There were fresh herbs all season too. Her parents would harvest all the tomatoes at the end of the growing season, and process them for freezing, so there would be fresh tomato sauce all winter!

Carol married young, and taught herself how to cook by following recipes and learning techniques by trial and error. She realized over the years that she had a real talent, and friends looked forward to being invited over for a meal.  Her ex-husband loved good food (he was 100% Greek and the women in his family LIVED for cooking and eating).  So while learning, she was free to experiment, and got better and better as the years went by.  She also grew vegetable gardens, and like her father, found it very rewarding and fulfilling.  Her three grown sons have become accustomed to good cooking and have been very useful when Carol needs to try out a new recipe!

Happily divorced for 9 years, Carol continues trying new recipes, watches food shows as often as possible, and still finds cooking and serving good food a real passion and source of contentment.
